Chanterelle Quiche with Puff Pastry
Chanterelle quiche is a French dish consisting of chanterelles, eggs, cream and cheese, baked in a pastry crust, in this case using puff pastry. It has a delicate and slightly fruity taste and is a favorite among mushroom and quiche lovers.

Instructions
Wash the potatoes and cook in boiling salted water for 20-25 minutes. Then drain, leave to evaporate, peel and cut into slices when cold. Peel and finely chop the onion. Clean the chanterelles thoroughly and, depending on their size, halve, quarter or leave whole. Then fry together with the onion in a large pan in hot butter and oil for approx. 5 minutes. Season with salt and pepper.
Puree the tofu and cream into a smooth mixture, fold in half the parsley and season with salt and pepper.
Roll out the puff pastry, place in the tins and press down lightly. Mix the mushrooms with the tofu cream. Place the potato slices on the puff pastry bases and pour the mushroom mixture over them.
Bake in a preheated oven (electric oven: 200°C/convection oven: 175°C/gas: level 3) for approx. 40 minutes.
