Watermelon, Prawn and Avocado Salad

Ingredients

Onion
Chilli
Watermelon
Avocado
Coriander
Garlic clove
Lime juice
Rice vinegar
Sugar
Salt
Pepper
Cooked tiger prawns

Instructions

Finely chop the onion and chili. Dice the watermelon and avocado. Chop the coriander.
Put the onion in a medium bowl with the garlic, chilli, lime juice, vinegar, sugar and some seasoning. Leave to marinate for 10 mins.
Add the watermelon, avocado, coriander and prawns, then toss gently to serve.
