Mushroom and Potato Casserole
This simple and hearty casserole is made of mushrooms and onion layered with mashed potatoes and topped with grated cheese, which is then baked until golden brown. Using packet mashed potatoes enables this dish to be quickly prepared without sacrificing flavor.

Instructions
Clean the mushrooms, wash them, cut them into slices (this can be done very quickly with an egg slicer). Peel the onion and chop finely. Sauté in butter until translucent. Add mushrooms, fry until all liquid has evaporated. Season to taste with pepper and salt.
Wash and finely chop the parsley. Stir into the mushrooms. Coarsely grate the cheese. Prepare mashed potatoes according to package directions, but with a little less liquid to make a firm mash.
Fill a buttered baking dish with layers of mashed potatoes and mushrooms. Spread the cheese on top. Bake the casserole at 250°C for 12-15 minutes.
