Grilled Fish Fillets on Vegetables
A delicious fish and vegetable casserole. It consists of pan fried fish fillets on a bed of carrot sticks, leek rings and spinach covered with tomato slices and cheese and baked until golden brown.

Instructions
Wash and clean the carrots and cut into sticks. Cook in very little salted water for 10 minutes. Wash and cut the leeks into rings, add to the carrots and cook for another 5 minutes. Season with salt and pepper. Remove the vegetables, drain and defrost the spinach leaves in the remaining vegetable water and season with nutmeg. Decoratively layer the vegetables in a shallow ovenproof dish.
Sprinkle the fish with a little lemon juice, salt. Turn in flour. Fry in hot butter on both sides until golden brown. Season lightly with pepper. Place the fish on top of the vegetables.
Wash and slice the tomatoes. Spread on the fish. Put the cheese slices on top. Bake in preheated oven at 220°C for 7-8 minutes. Sprinkle with parsley and serve.
