Asparagus Gratin
This asparagus gratin with bacon is a real taste experience. With a sauce comprising of three different cheeses and spices, the gratin is a tangy, delicate treat. The whole thing is topped with sautéed bacon and chive rolls.

Instructions
Peel white asparagus whole, green asparagus in the lower third and cut off the woody ends. Place in boiling salted water with butter and sugar and cook for 12-15 minutes.
Finely dice onion and bacon and fry in hot oil for 3-4 min. and let cool. Cut the chives into small rolls.
For the sauce, coarsely grate the cheese. Mix with milk, eggs, salt, pepper and nutmeg. Mix chives and bacon and onion mixture into the egg milk.
Place well drained asparagus in greased baking dish. Spread the glaze over the top. Bake in hot oven at 180°C (convection oven 160°C 2nd rack from bottom) for 25-30 minutes until golden brown. Serve sprinkled with chives.
