Instructions
Put the flour in a bowl and make a well. Mix the yeast with the first amount of warm milk. Dust with a little flour, cover and let rise for about 15 minutes. Melt butter. Knead remaining milk, butter, sugar and egg into the dough. Cover dough and let rest in a warm place for about 60 minutes. Roll out dough on floured surface and place on baking sheet lined with parchment paper, raising a rim. Let dough rise again for 30 minutes.
Preheat oven to 180°C (convection oven: 160°C). For the topping, mix quark with sugar and eggs until smooth. Wash the lemon with hot water and finely grate the zest. Stir juice, peel and vanilla pudding powder into the quark mixture. Drain the cranberries. Divide the quark mixture into thirds. Mix first part with the poppy seed paste (either a already prepared package or home made), the second part with wild cranberries and almonds. Leave the remaining part as it is. Sprinkle the cranberries evenly on the yeast base.
Spread the three quark masses alternately with a spoon close together as blobs on the yeast base. Bake the cake in the oven for about 50 minutes. Serve with whipped cream.
