Vegetarian Flammkuchen with Leek and Tofu

Flammkuchen is a pizza-like dish that is very popular in the Alsasce region of France and the neighbouring areas of Germany, consisting of a very thin crisp base with various toppings, both sweet and savoury. This vegetarian version has a sauce of silken tofu, freshly chopped thyme, rice drink and pepper that is topped with leek rings and cubes of smoked tofu.

Instructions
Dissolve the yeast in lukewarm water, knead with the flour and salt to form a smooth dough until it separates from the edge of the bowl. Vary the amounts of flour slightly as needed. Cover and let rise in a warm place for about 30 minutes.
Preheat the oven to 240°C convection oven. Cover two baking trays with baking paper.
Knead the yeast dough on a floured work surface, divide into 4 pieces and roll each out into an oblong patty. Place 2 pieces each on a baking sheet.
Mix the silken tofu with the rice milk and thyme until smooth and season with salt and pepper. Spread the mixture on the dough, leaving a narrow edge.
Clean the leek, wash, rub dry and cut into narrow rings. Cut the smoked tofu into small cubes. Spread the leek and tofu on the patties. Bake in a hot oven for 10-15 minutes until golden brown and crispy.
Remove from trays, season lightly with salt and pepper and serve cut into pieces.
