Pea Mint Soup

Instructions
Peel and coarsely dice the potatoes. Cut onions and garlic into cubes and then sauté in oil. Now add the potato cubes and sweat everything for a short time. Add the peas and deglaze with the vegetable stock. Let it simmer until the potatoes are soft.
Die Kartoffeln schälen und grob würfeln. Zwiebeln und Knoblauch in Würfel schneiden und in Öl andünsten. Nun die Kartoffelwürfel dazugeben und alles kurz anschwitzen. Die Erbsen dazugeben und mit der Gemüsebrühe ablöschen. So lange köcheln lassen, bis die Kartoffeln weich sind.
Serve the soup with a blob of yogurt if desired.
Tip: Make your own vegetable stock from carrots, celery, onions, bay leaf, allspice, juniper, thyme, rosemary and pepper. Simmer everything together in water for half an hour. Done.
