Coca-Cola Brownie Crinkle Cookies

Instructions
Preheat oven to 350°F. Line baking sheet with a silicone baking mat or parchment paper and set aside.
In a saucepan over a low heat combine butter and roughly chopped chocolate and stir regularly until the chocolate is melted (alternatively you can short bursts in a microwave, stirring between each burst).
Transfer the chocolate mixture to a bowl and add in the sugar and cocoa powder and mix until smooth, then add in the eggs, vanilla extract and Coca-Cola and stir until combined. In a separate bowl combine the flour, baking powder and salt and mix well. Then combine the chocolate mixture and flour mixture and mix well.
Pour powdered sugar into a shallow bowl. Using a cookie scoop or a spoon scoop tablespoon size balls of cookie batter and roll it into the powdered sugar (this is what gives it the crinkle) then place the dough ball on the cookie sheet and gently press down.
Bake for 12 minutes then remove from oven and allow to cool for 5 minutes before transferring to a wire wrack to cool.
