Spinach Roll

Instructions
Defrost the frozen spinach according to package directions. Let cool, then squeeze in a cloth, leaving about half of the spinach. Soak the rolls in water.
Line a baking tray with baking paper. Preheat the oven to 200°C.
In a bowl, mix squeezed rolls and spinach. Either finely chop through blender. Mix in breadcrumbs and egg yolk. Season with salt, pepper and nutmeg. Beat the egg whites until stiff and fold in. Spread the dough on the baking tray covered with baking paper and bake for 15 minutes.
Remove the tray from the oven and cover with a cloth for 5 minutes, turn the dough out onto the cloth. Remove the baking paper.
Whisk eggs and milk, add salt and pepper. Grate about 2/3 of the cheese. Prepare scrambled eggs in the butter. Spread on the dough together with the freshly grated cheese.
Roll up the roulade and place it back on the baking tray. Slice the remaining cheese and place on top of the roulade and bake for another 10 minutes at 200°C.
