Cheese Puff

Windbeutelchen is a delicious German pastry that consists of a choux pastry, which is filled with a variety of both sweet and savoury fillings. The name literally means "little wind bags," which is a reference to the pastry's light and airy texture. This recipe provies two savoury versions: one that contains a filling of egg, mayonnaise and cheese and another that combines fresh cheese and chives.

Instructions

Bring the water, butter and salt to a boil. Stir in the flour and baking powder and mix everything together to form a ball. Cook the mixture for 1-2 minutes until a white coating forms on the bottom of the pot. Remove from heat and let cool. Then stir the eggs, one by one, into the lukewarm dough. The batter should fall from the wooden spoon in sharp cones. Leave to cool.
Pipe very small puffs onto the baking sheet and bake at 200°C for 30 minutes.
For the egg filling, pass the egg yolks through a sieve. Stir in mayonnaise and grated Gouda and season with mustard, pepper and salt.
For the cottage cheese filling, wash the herbs and chop them very finely. Mix the cottage cheese with 2-3 tablespoons of the cream until smooth. Whip the remaining cream until stiff. Fold into the cottage cheese with the herbs. Season with lemon juice, salt, pepper and paprika.
Cut open the puffs and fill them with the filling. It looks most beautiful when you squirt the filling into the puffs with a spout.
