Chickpea and Spinach Curry

Instructions
Dice the onion and crush the garlic.
Heat olive oil in a large pan and add onion and garlic and cook for 2 minutes.
Add ground coriander, paprika, cumin, ground turmeric and cayenne pepper and stir well.
Add tomatoes, chickpeas, salt and black pepper. Reduce the heat and simmer for 8 minutes.
2 minutes before it has finished cooking, add spinach and fresh coriander (cilantro) and stir well.
Cook for 2 minutes or until the spinach has wilted. Serve with more chopped coriander (cilantro) on top.
