French Apple Cake

This delicious apple cake differs from more conventional cakes in that it is made with semolina and quark, with leavening provided by beaten egg whites. This produces a cake with a great flavor and a light and fluffy texture that is also very healthy.

Ingredients

Eggs
Salt
Lemon juice
Lemon zest
Apples
Butter
Sugar
Vanilla extract
Quark
Semolina

Instructions

Peel apples, quarter and cut into small slices. Halve the lemon and squeeze the juice over the apples.
Beat soft butter until creamy. Gradually add the sugar, vanillin and grated lemon zest. Mix the ingredients until a smooth mass is formed. Gradually stir in the egg yolks, then add the quark and semolina and mix for 1 minute.
Mix the apples with the batter.
Beat the egg whites with salt very stiff and immediately fold into the batter.
Line a springform baking tin with parchment paper and grease the edges. Pour the batter into the springform pan and smooth out.
Bake at 180°C for approx. 60 minutes on the lower shelf. After 45 minutes, I cover the cake with aluminum foil so that it stays nice and light on top.
After the baking time, let the cake cool down in the switched-off oven for about 15 minutes.
Enjoy the cake hot or cold.
