Ham Pockets

Fluffy butter pastry parcels with a creamy ham and cheese filling. They are quick to prepare and are perfect as a starter or snack.

Instructions
Heap the flour, quark, chopped butter and salt onto the work surface. First chop through with a large knife, then knead into a smooth dough with your hands. Wrap in cling film and chill for an hour.
Cut the ham and cheese into small cubes. Mix in a bowl with the egg and cream. Season the mixture with pepper.
Roll out the dough to half a centimeter thick on a lightly floured surface. Cut out squares (10x10 centimeters in size). Brush the edges with egg white. Place a tablespoon of filling in the center of each square. Fold together to form a triangle and press firmly at the edges.
Place the pockets on a buttered baking tray or one lined with baking paper, brush with beaten egg yolk and bake at 200°C for approx. 20 minutes.
