Instructions
Cut the fish into large cubes. Sprinkle with lemon juice and salt. Fry in butter in a large pan until golden brown on all sides. Do not fry for too long, otherwise the cubes will fall apart easily. Remove and keep warm.
Finely chop the onions and sauté in the remaining butter. Slice the potatoes and fry until golden brown, season lightly with salt. Spread the fish cubes on top. Crack the eggs and slide them onto the fish so that the yolks remain whole. Sprinkle with freshly grated cheese. Leave to set over a low heat with the lid closed. Serve with fresh garden herbs.
