Quick Vegetable Rice
This quick and easy to prepare dish combines rice with sausage, vegetables, mushrooms and cheese for a healthy and delicious meal.

Instructions
Peel and finely chop the onion. Stir-fry in the butter until translucent. Fry the rice until it is also translucent. Deglaze with the meat stock. Simmer over a low heat for 20 minutes.
Dice the sausage. Mix into the rice with the vegetables and mushrooms and heat through.
Wash the parsley, pat dry and chop finely. Cut the Gouda into cubes. Mix with the rice. Season the dish well with salt, pepper and nutmeg.
Tip: If you are using fresh vegetables, cook them in lightly salted water beforehand. Rinse under cold water so that they retain their color. Drain in a sieve.
