Curried Lamb Fillet Steak

Instructions
Reduce stock and coconut milk by half. Slice lamb fillets and stir-fry in peanut oil.
Mix spinach leaves curry coconut powder and mushrooms into the thickened stock. Fold in the meat.
Mix cornstarch with a little water and stir into the meat mixture. Bring to the boil once (stirring as you do so).
Season to taste with salt and Szechuan pepper.
