Broccoli Rice with Soufflé Top

Instructions
Clean the fresh broccoli, wash, leave stalk finger-length and cut stalk ends crosswise. Remove the green leaves. Put the broccoli in boiling salted water for 8 minutes. Rinse with cold water and drain.
Stir the rice in boiling salted water, let it swell on a mild heat in 20 minutes.
Peel and finely chop the onion and garlic. Sauté in butter until translucent.
Add the cooked broccoli and rice. Salt, pepper well and season with nutmeg. Pour into a buttered baking dish.
Whisk together freshly grated cheese, egg yolks and milk. Beat the egg whites until stiff and fold into the egg yolk mixture. Spread over the broccoli. Bake at 225°C for 30 minutes.
