Zucchini Cake

Zucchini cake is a delicious and healthy cake made with grated zucchini, flour, ground hazelnuts, milk, eggs, sugar, oil, and cinnamon. Ingredients

For the dough:
Zucchini
Flour
Baking powder
Ground hazelnut
Cinnamon
Sugar
Vanilla sugar
Salt
Eggs
Oil
Milk
Oil
For the glaze:
Milk chocolate
Chopped hazelnuts

Instructions

Wash zucchini and grate finely over a household grater. Transfer to a bowl. Grease baking tray and line with baking paper. Preheat oven to 180°C (convection oven 160°C).
Mix dry ingredients in a bowl. Add eggs, oil and milk and mix with a hand mixer for 2 minutes. Drain zucchini rasps a little if necessary and stir into the batter. Spread on the baking tray. Bake for approx. 25 min. Let cool on a cake rack.
Coarsely chop couverture and melt in a bowl over a hot water bath. Cut the cake into pieces and coat with the couverture. Sprinkle with chopped nuts as desired.
