Peach Flammkuchen

A delicious variation of the classic Alsace pizza that tastes fruity and sweet. The thin dough is spread with a sour cream and topped with fresh peach slices. Then the Flammkuchen goes into the hot oven for a few minutes until it is crispy. Finally, it is finished with ham, balsamic vinegar and honey. Peach Flammkuchen is a perfect summer snack, which is also good for sharing.

Ingredients

For the topping:
Peaches
Crème fraîche
Salt
Pepper
Mozzarella
Ham
For the balsamic sauce:
Balsamic vinegar
Honey
For the dough:
Flour
Salt
Olive oil
Water

Instructions

For the dough, knead flour, salt, olive oil and water until smooth and form a ball.
Place the balsamic vinegar and honey in a small saucepan and reduce over medium heat for approx. 15 min. Keep stirring with a silicone spatula so that nothing burns. Pour the reduction into a small bowl.
Preheat the oven to 200°C top/bottom heat.
Wash and dry the peaches and cut into thin wedges. Stir the crème fraîche until smooth and season with salt and pepper.
Using a rolling pin, roll out the dough ball on a floured work surface into an oval patty and place on a baking sheet lined with parchment paper.
Spread the dough patty with the crème fraîche and top with the peach wedges. Cut the mozzarella balls in half and place them on top.
Bake in the oven for about 10 minutes at 200°C until crisp.
Remove the flatbread from the oven and top with the ham. Drizzle the balsamic sauce over it with a spoon and sprinkle with fresh herbs to taste.
