Apple Flammkuchen

Instructions
Put wheat flour, corn flour and water with olive oil in a mixing bowl and knead with the dough hook of the hand mixer until smooth. Roll out oval and very thin on a piece of baking paper to form the flammkuchens.
Preheat oven to 250°C top/bottom heat.
Core apple and cut into thin slices. Heat butter in a pan and fry apple slices briefly in it.
Peel onions and cut into rings. Remove apple slices from pan, heat 1 tablespoon olive oil in pan and fry onion rings. Add sugar and let onions caramelize in it. Deglaze with red wine vinegar, pluck thyme and rosemary from stems and add. Let the liquid boil down.
Season sour cream with salt and pepper and spread thinly on the rolled-out dough. Spread caramelized onions and apple slices on top.
Slice the brie and place on top of the dough.
Bake the flammkuchen in the preheated oven at 250°C for about 10-15 minutes, until the bottom is crispy and the brie melts.
Chop walnuts and sprinkle over the flammkuchen 2 min. before the end of the baking time.
