Red Cabbage Soup with Citrus Pistachios

Instructions
Cabbage clean wash and cut into strips. Peel and chop onion and garlic. Wash, peel, core and dice apples. Grind juniper berries, allspice seeds, cloves and bay leaf.
Heat oil in a saucepan and sauté onions and garlic over medium heat. Stir in spices. Sauté red cabbage and apples for 2 min. Deglaze with vinegar juice and broth. Add salt and pepper. Cover and simmer over low heat for 20 minutes.
Pistachios peel coarsely mortar and roast without fat. Wash lemon hot, dry and grate the peel and stir in. Puree the soup. Stir in cream and honey. Serve each with sour cream and citrus pistachios.
