Instructions
Preheat the oven to 220°C top/bottom heat (fan oven: 200°C). Allow the puff pastry to reach room temperature and cut out circles, place the circles in a greased muffin tin.
Bring the sugar, water and lemon zest to the boil over a medium heat. Continue to bring the liquid to the boil over a medium heat to form a syrup (approx. 10 mins.).
Mix the cornflour with the flour in a bowl. Add some of the milk and stir the mixture until there are no more lumps. Pour the rest of the milk into a pan. Add the cornflour and milk mixture and stir briefly, then bring to the boil over a medium heat while stirring. As soon as the mixture thickens, turn off the heat. Slowly pour in the sugar syrup while stirring. Stir everything well with a whisk.
Stir the egg yolks into the hot pudding. Pour the hot mixture into the puff pastry cases. Bake the Pasteis de Nata in the preheated oven for approx. 12-14 mins. until golden brown and the surface may turn brown. Sprinkle the lukewarm Pasteis de Nata with a little cinnamon and powdered sugar and serve.
