Ciabatta
Ciabatta is a type of Italian bread that has a flat, slipper-like shape and a crisp crust. It is made with wheat flour, water, salt, yeast and olive oil, and has a moist and airy crumb. Ciabatta can be used to make sandwiches, toast or bruschetta. The name ciabatta means “slipper” in Italian.

Instructions
Mix flour with sugar and salt in a bowl. Crumble in the yeast. Add 270ml of lukewarm water and mix with a wooden spoon. The dough is very soft and should therefore be covered and left to rest for at least 2 hours so that the aroma develops.
Transfer dough to a heavily floured work surface and fold into a packet with lightly moistened hands. Fold the dough piece again. Cover and let rest on work surface for 30 minutes. Then fold the dough again twice into parcels and let rest covered for 15 min.
Prepare a tray with baking paper. Sprinkle some flour on the baking paper. Sprinkle dough with a little flour and form a dough strand about 30 cm long. Place on the baking sheet and sprinkle the patties with a little flour. Cover and let rest for 30 minutes. Preheat oven to 240 degrees (convection oven: 220 degrees). Bake for approx. 22 min. and let cool on a cooling rack.
