Sunken Pear Cake
The perfect cake for Autumn, this cake is super moist with the fruity flavor of pears. Chunks of pear are pressed into the cake batter, giving the cake its name.

Instructions
Peel the pears, cut in half and remove the core. Rub the fruit halves well with lemon juice to prevent them from turning brown.
Beat the butter, sugar, cognac and lemon zest to a thick cream using a hand mixer. Gradually stir in the egg yolks.
Mix the flour, rusk crumbs, almonds and baking powder. Stir into the batter a tablespoon at a time. Finally, fold in the beaten egg whites. Pour the batter into a buttered and breadcrumb-coated tin. Place the pears in the dish cut side down.
Mix the sugar and cinnamon and sprinkle over the cake. Bake at 180°C for 55-60 minutes on the lower shelf. While still hot, spread with the warm and smooth apricot jam.
