Instructions
Mix the flour, eggs, salt and water to form a smooth batter. Beat with a mixing spoon until it turns pale. Leave to stir for 15 minutes so that the flour can swell.
Press the dough through a spaetzle press into boiling salted water. Leave the spaetzle in the water until they float to the surface. Lift out and drain.
Finely grate the cheese. Layer alternately with the spaetzle in an ovenproof dish. Finish with the cheese and pour over the hot meat stock.
Peel the onions, cut into rings and fry in hot butter until crispy. Pour over the cheese spaetzle together with the butter. Bake in the oven at 250°C for 10 minutes.
