Stuffed Zucchini (Mehshi Koussa Ablama)

Stuffed zucchini, also known as Mehshi Koussa Ablama, is a popular Middle Eastern dish made by hollowing out zucchini and filling them with a mixture of ground meat (usually beef or lamb), onions, tomatoes, herbs and spices and sometimes rice. The stuffed zucchini are then cooked in a tomato-based sauce and served either hot or at room temperature. Ingredients

Zucchinis
Ground beef
Onion
Tomatoes
Cloves of garlic
Olive oil
Spices:
Salt
Cinnamon
Allspice
Pepper
Paprika

Instructions

Wash the zucchinis and remove the small cap from one end and core with a veggie corer or split in half and core with a spoon. Set the flesh aside to use later for treedeh or fritters.
Mix the meat and spices.
Chop the onion. Heat the olive oil and fry the onion till golden then add the meat and brown. Drain and stuff the zucchini with the meat.
Gently fry the zucchini in a film of grease left on the skillet till golden. Add the tomatoes and about enough water to come half-way up the zucchinis. Cover the skillet and simmer gently for 25 minutes or so or bake in a 325°F oven for that same amount of time. Serve warm with pita bread or some rice.
Tip: Place an inverted small plate on the zucchinis to keep them submerged in bouillon.
