Christmas Marble Cake with Streusel and Roasted Almonds

Marble Cake, or Marmorkuchen, is a classic German dessert that traditionally combines chunks of chocolate and vanilla cake to give a marbled appearance. This Christmas twist on the classic swaps the chocolate and vanilla for apricot and gingerbread and is topped with streusel. It's a delicious and visually stunning dessert perfect for the holiday season.

For the Streusel:
Almonds
Sugar
Butter
Flour
For the cake:
Canned apricots
Butter
Sugar
Salt
Vanilla sugar
Eggs
Flour
Baking powder
Milk
Nougat
Gingerbread spice
Butter
Powdered sugar

Instructions

For the Streusel:

Coarsely chop the roasted almonds. Knead sugar, butter in flakes and flour with the dough hook of the hand mixer to make crumbles. Knead in the almonds.

For the cake:

Drain apricots, drain well and cut into cubes.
Cream butter, sugar, salt and vanilla sugar with the whisk of a hand mixer. Stir in eggs one at a time. Mix remaining flour and baking powder and stir in alternately with the milk.
Pour half of the dough into a greased, floured springform pan and smooth it out. Spread the apricots on top. Warm the nougat over a warm water bath until it is smooth.
Mix the nougat and gingerbread spice with the second half of the dough and spread on the apricots. Spread the crumble on top and bake in a preheated oven (electric oven: 175°C/ convection oven: 150°C/ gas: see manufacturer) for approx. 50 minutes.
Remove and allow to cool.
Carefully remove the cake from the mold, place on a plate and dust with powdered sugar. It is served with whipped cream.
